Ingredients

For the cranberry topping
  • 1 cup cranberries fresh or frozen
  • 0.25 cup granulated sugar
  • 2 tbsp water
  • 1 tsp orange zest finely grated
For the brie
  • 1 wheel (8 oz) Brie cheese rind left on

Equipment

  • 1 6-inch oven-safe baking dish

Method

Make the cranberry topping
  1. Combine the cranberries, granulated sugar, and water in a small saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally.
  3. Cook for 8 to 10 minutes, until most cranberries have burst and the mixture is thick.
  4. Stir in the orange zest and remove from the heat.
Bake the brie
  1. Heat the oven to 350°F.
  2. Place the Brie cheese in a 6-inch oven-safe baking dish and spoon the cranberry topping over it.
  3. Bake for 10 to 12 minutes, until the center feels soft when gently pressed.
  4. Rest for 5 minutes before serving.

Notes

For the best texture, serve the Brie warm while the center is soft. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a dairy-free variation, use a plant-based Brie-style wheel.
