Ingredients

  • 3 tbsp unsalted butter
  • 0.25 cup yellow onion finely chopped
  • 3 cloves garlic minced
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 0.5 cup heavy cream
  • 4 oz cream cheese cut into small cubes
  • 2 package (10 oz) frozen chopped spinach thawed and squeezed very dry
  • 0.5 cup Parmesan cheese finely grated
  • 0.125 tsp ground nutmeg
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet

Method

  1. Melt the butter in a 12-inch skillet over medium heat, then add the onion and cook for 3 to 4 minutes, stirring occasionally, until softened.
  2. Add the garlic and cook for 30 seconds, then stir in the flour and cook for 1 minute.
  3. Gradually whisk in the milk and heavy cream until smooth, bring to a gentle simmer, and cook for 2 to 3 minutes, whisking often, until thickened.
  4. Add the cream cheese and whisk until melted and smooth.
  5. Stir in the spinach, Parmesan, nutmeg, salt, and pepper; cook for 3 to 5 minutes, stirring occasionally, until hot and creamy.

Notes

For the creamiest texture, squeeze the thawed spinach very dry before adding it. Refrigerate leftovers in an airtight container for 3 to 4 days; freezing is not recommended because the cream sauce may separate. Use a gluten-free all-purpose flour blend for a gluten-free version.
