Ingredients

  • 6 oz bacon cut into 1/2-inch pieces
  • 1.5 lb Brussels sprouts trimmed, halved, and patted dry
  • 1 tbsp olive oil
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 rimmed 18x13-inch baking sheet
  • 1 12-inch skillet

Method

  1. Heat the oven to 425°F.
  2. Set out a rimmed 18x13-inch baking sheet.
  3. Cook the bacon in a 12-inch skillet over medium heat for 8 to 10 minutes, stirring occasionally, until crisp.
  4. Transfer the bacon to a paper towel-lined plate.
  5. Leave 1 tablespoon of drippings in the skillet.
  6. Toss the Brussels sprouts in a large bowl with the reserved bacon drippings, olive oil, salt, and pepper.
  7. Arrange the sprouts cut-side down in a single layer on the baking sheet.
  8. Roast for 20 to 25 minutes, until tender and deeply browned on the cut sides.
  9. Transfer the sprouts to a serving dish.
  10. Scatter the crisp bacon over the sprouts.
  11. Serve.

Notes

For maximum browning, pat the sprouts completely dry and arrange them cut-side down in a single layer. Refrigerate leftovers for up to 4 days; freezing is not recommended because the sprouts can soften. For a pork-free variation, use turkey bacon.
