Ingredients

For the fritters
  • 1 cup pumpkin puree canned
  • 1 egg large
  • 0.25 cup milk
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.5 tsp kosher salt
For frying
  • 3 cups vegetable oil
For the maple glaze
  • 1 cup confectioners’ sugar
  • 3 tbsp pure maple syrup
  • 1 tbsp milk
  • 0.125 tsp kosher salt

Equipment

  • 1 10-inch heavy skillet
  • 1 rimmed baking sheet

Method

Mix the fritters
  1. Whisk the pumpkin, egg, milk, and vanilla in a large bowl until smooth.
  2. In a separate bowl, whisk the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Fold the dry ingredients into the pumpkin mixture just until no dry flour remains; the batter will be thick.
Fry the fritters
  1. Pour the oil into a 10-inch heavy skillet.
  2. Heat the oil over medium heat to 350°F.
  3. Set a wire rack over a rimmed baking sheet.
  4. Drop rounded tablespoons of batter into the hot oil in batches, gently flattening each to about 1/2 inch thick.
  5. Fry for 2 to 3 minutes per side, maintaining the oil at 350°F, until deep golden, cooked through, and 160°F in the center.
  6. Transfer the fritters to the rack.
  7. Let them drain and cool for 5 minutes.
Make the maple glaze
  1. Whisk the confectioners’ sugar, maple syrup, milk, and salt in a small bowl until smooth.
  2. Drizzle the glaze over the fritters just before serving.

Notes

Keep the oil at 350°F for crisp, evenly cooked fritters. Refrigerate leftovers for up to 3 days; freeze for up to 2 months. Milk can be swapped for an unsweetened non-dairy milk.
