Method
- In a 5-quart Dutch oven over medium-high heat, cook the ground beef with the salt and pepper, breaking it into small pieces, for 6 to 8 minutes, until browned and it reaches 160°F.
- Transfer the beef to a bowl with a slotted spoon.
- Add the butter, onion, carrots, and celery to the pot and cook over medium heat for 5 to 7 minutes, stirring occasionally, until the vegetables begin to soften.
- Add the garlic and cook for 30 seconds.
- Stir in the flour and cook for 1 minute.
- Gradually whisk in the beef broth until smooth, then stir in the potatoes and Worcestershire sauce.
- Bring the soup to a gentle boil.
- Reduce the heat and simmer uncovered for 12 to 15 minutes, stirring occasionally, until the potatoes are fork-tender.
- Stir in the cooked beef, milk, and Velveeta.
- Cook over low heat for 3 to 5 minutes, stirring often, until the cheese is melted and the soup is steaming, without letting it boil.
Notes
For a smooth finish, add the milk and Velveeta over low heat and do not let the soup boil. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended because the potatoes and cheese may change texture. For a gluten-free version, use a cup-for-cup gluten-free flour blend.
