Ingredients

Brown the ham and pineapple
  • 1 tbsp neutral oil
  • 2 ham steaks 8-ounce each, fully cooked, about 1/2 inch thick
  • 1 can (20 oz) pineapple rings in juice, drained; reserve 0.5 cup juice
For the glaze
  • 0.33 cup brown sugar packed, light
  • 2 tbsp Dijon mustard
  • 1 tbsp unsalted butter

Equipment

  • 1 12-inch skillet

Method

Brown the ham and pineapple
  1. Heat the oil in a 12-inch skillet over medium heat.
  2. Add the ham steaks and cook for 3–4 minutes per side, until browned and heated to 140°F; transfer to a plate.
  3. Cook the pineapple rings in the skillet in batches for 1–2 minutes per side, until lightly browned, then transfer them to the plate.
Make the glaze and finish
  1. Reduce the heat to medium-low and whisk the reserved pineapple juice, brown sugar, and Dijon mustard into the skillet.
  2. Add the butter and simmer for 3–5 minutes, whisking often, until the glaze thickens slightly.
  3. Return the ham steaks and pineapple to the skillet and turn to coat.
  4. Cook for 1–2 minutes, until hot and glazed, then serve.

Notes

For a thicker glaze, simmer until it lightly coats the back of a spoon. Refrigerate leftovers for up to 3 days; freezing is possible, though the pineapple may soften. Use dairy-free butter for a dairy-free swap.
