Ingredients

For the pastry
  • 1 nonstick cooking spray as needed
  • 1 tbsp all-purpose flour for dusting
  • 1 sheet puff pastry frozen, from a 17.3-ounce package, thawed
For the filling
  • 1 wheel (8 oz) Brie cut into 24 pieces
  • 0.5 cup whole-berry cranberry sauce
  • 0.25 cup pecans finely chopped
  • 1 tsp fresh rosemary finely chopped

Equipment

  • 1 24-cup mini muffin pan

Method

Prepare the pastry
  1. Heat the oven to 375°F.
  2. Lightly coat a 24-cup mini muffin pan with nonstick cooking spray.
  3. Dust a clean work surface with the flour.
  4. Unfold the puff pastry and roll it into a 12x8-inch rectangle.
  5. Cut the pastry into 24 (2-inch) squares.
  6. Press one pastry square into each muffin cup, letting the corners extend above the edges.
Fill and bake
  1. Place one piece of Brie in each pastry cup.
  2. Top each with about 1 teaspoon cranberry sauce.
  3. Divide the pecans and rosemary among the cups.
  4. Bake for 15 to 18 minutes, until the pastry is golden brown and the Brie is softened.
  5. Let the bites rest in the pan for 5 minutes.
  6. Loosen them gently and transfer to a serving plate.

Notes

For the neatest pastry cups, keep the thawed puff pastry cool while assembling. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended for the best pastry texture. For a nut-free option, omit the pecans.
