Method
Prepare the potatoes
- Coat the inside of a 6-quart slow cooker with cooking spray.
- Peel and slice the potatoes 1/8 inch thick, then thinly slice the onions.
Make the cream sauce
- Melt the butter in a medium saucepan over medium heat.
- Whisk in the flour and cook for 1 minute.
- Gradually whisk in the milk and heavy cream, then bring the mixture to a gentle simmer.
- Whisk for 3 to 5 minutes, until thick enough to coat the back of a spoon.
- Whisk the salt, pepper, and nutmeg into the sauce.
Layer and cook
- Arrange one-third of the potatoes in the slow cooker, top with one-third of the onions, and spoon over one-third of the sauce; repeat twice, ending with sauce.
- Cover and cook on LOW for 5 to 6 hours or HIGH for 3 to 4 hours, until the potatoes are easily pierced with a knife.
- Turn off the slow cooker and remove the lid.
- Let the potatoes rest for 15 minutes before serving.
Notes
For the smoothest sauce, add the milk and heavy cream gradually while whisking. Refrigerate leftovers for up to 4 days; freezing is not recommended because the cream sauce may separate. For a lighter option, replace the heavy cream with additional whole milk.
