Method
Cook the apples
- Lightly coat the inside of a 6-quart slow cooker with nonstick cooking spray.
- Add the apples, lemon juice, granulated sugar, and cornstarch to the slow cooker and toss until the apples are evenly coated.
- Cover and cook on LOW for 3-4 hours or HIGH for 2-3 hours, until the apples are tender when pierced with a knife.
Make the cinnamon oat topping
- In a medium bowl, stir together the oats, flour, brown sugar, cinnamon, and salt, then work in the butter with your fingertips until coarse clumps form.
- Toast the mixture in a 10-inch skillet over medium-low heat for 8-12 minutes, stirring frequently, until golden and crisp.
- Spread the topping on a plate to cool.
Finish and serve
- Turn off the slow cooker and uncover the apples.
- Let the apples stand for 10 minutes.
- Sprinkle the crisp topping over the apples just before serving.
Notes
For the crispest texture, sprinkle on the topping just before serving. Refrigerate leftovers for up to 4 days; freeze for up to 3 months. A dairy-free butter alternative can replace the unsalted butter.
