Make the cheesecake filling
- Beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip heavy whipping cream to stiff peaks.
- Fold the whipped cream into the cream cheese mixture until no streaks remain.
Layer the parfaits
- Add cookie crumbs to serving glasses, then spoon cheesecake filling over the crumbs.
- Add a layer of diced strawberries over the filling.
- Repeat with cheesecake filling, then add blueberries on top.
- Finish each glass with whipped cream and extra berries.
Chill
- Chill the parfaits for at least 1 hour before serving to set the layers.
Notes
For the smoothest texture, make sure the cream cheese is fully softened before mixing. Cover and refrigerate leftovers up to 2 days (berries may release some juice but still taste great). Freezing isn’t recommended for parfaits due to berry texture. If you want a lighter version, use light cream cheese and whip the heavy cream as directed for a reduced-fat option.
