Ingredients

For the turkey
  • 1 yellow onion medium, sliced
  • 1 tbsp fresh sage chopped
  • 2 cloves garlic smashed
  • 1.5 cup low-sodium chicken broth
  • 1.5 lb turkey tenderloins to 2 lb, usually 2 pieces
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
For the gravy
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 0.5 cup heavy cream

Equipment

  • 1 6-quart slow cooker

Method

Cook the turkey
  1. Arrange the onion, sage, and garlic in a 6-quart slow cooker, then pour in the chicken broth.
  2. Season the turkey tenderloins all over with the salt and pepper.
  3. Place the turkey tenderloins on top of the onion mixture.
  4. Cover and cook on LOW for 3 to 4 hours or HIGH for 1 1/2 to 2 1/2 hours, until the thickest part of each tenderloin reaches 165°F on an instant-read thermometer.
  5. Transfer the turkey to a platter.
  6. Tent the turkey loosely with foil and let it rest for 10 minutes.
  7. Strain the cooking liquid and measure out 1 1/2 cups, discarding any extra.
Make the gravy
  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for 1 minute.
  3. Gradually whisk in the measured cooking liquid and heavy cream.
  4. Simmer for 2 to 4 minutes, whisking often, until smooth and thickened.
  5. Slice the turkey and serve with the gravy.

Notes

For the smoothest gravy, whisk the cooking liquid in gradually to prevent lumps. Refrigerate turkey and gravy separately for 3 to 4 days; freezing is possible, though the cream gravy may separate when thawed. For a lighter gravy, use half-and-half in place of heavy cream.
