Ingredients

  • 6 bacon slices, chopped
  • 1 yellow onion small, finely chopped
  • 2 cloves garlic minced
  • 2 lb fresh green beans trimmed
  • 2 cups low-sodium chicken broth
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 5-quart Dutch oven

Method

  1. Cook the bacon in a 5-quart Dutch oven over medium heat for 6 to 8 minutes, stirring occasionally, until browned and crisp.
  2. Transfer the bacon to a plate with a slotted spoon, leaving about 2 tablespoons of drippings in the pot.
  3. Add the onion to the drippings and cook over medium heat for 4 to 5 minutes, stirring, until softened.
  4. Stir in the garlic and cook for 30 seconds.
  5. Add the green beans, chicken broth, salt, and pepper, then return the bacon to the pot and stir to combine.
  6. Cover and simmer over low heat for 35 to 45 minutes, stirring occasionally, until the beans are very tender.

Notes

For the best texture, leave about 2 tablespoons of bacon drippings in the pot as directed. Refrigerate leftovers in an airtight container for 3 to 4 days; freezing is suitable, though the beans may soften further when thawed. For a lighter option, use turkey bacon.
