Southern Peach Cobbler with Buttery Cake Crust

Southern peach cobbler bakes juicy peaches beneath a buttery cake crust until the cake is golden and the filling bubbles around the fruit. Let it rest for 20 minutes so the peach filling can settle before serving.

Ingredients

For the peach filling
  • 3 lb peaches ripe, peeled, pitted, and sliced
  • 0.5 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 0.5 tsp ground cinnamon
For the buttery cake crust
  • 0.5 cup unsalted butter
  • 1 cup all-purpose flour
  • 0.75 cup granulated sugar
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 0.75 cup whole milk
  • 1 tsp vanilla extract

Equipment

  • 1 4-quart saucepan
  • 1 9x13 inch baking dish

Method

Prepare the oven
  1. Preheat the oven to 350°F.
Cook the peach filling
  1. Combine the peaches, sugar, cornstarch, lemon juice, and cinnamon in a 4-quart saucepan, stirring until the cornstarch is evenly distributed.
  2. Cook over medium heat, stirring gently, for 5–8 minutes, until the juices bubble and thicken.
  3. Remove from the heat.
Make the cake crust
  1. Melt the butter in a microwave-safe bowl in 30-second bursts.
  2. Pour the melted butter into an ungreased 9x13-inch baking dish.
  3. Whisk together the flour, sugar, baking powder, and salt in a medium bowl.
  4. Whisk in the milk and vanilla until smooth.
Assemble and bake
  1. Pour the batter evenly over the melted butter without stirring.
  2. Spoon the peach filling and its juices evenly over the batter.
  3. Bake for 45–55 minutes, until the cake is golden and set around the peaches and the filling is bubbling.
  4. Rest for 20 minutes before serving.

Notes

For the best texture, use ripe but firm peaches. Refrigerate leftovers for up to 4 days; freezing is suitable, though the cake crust may soften after thawing. For a dairy-free variation, use plant-based butter and milk.
