Ingredients

  • 1 lb strawberries fresh, stems attached, washed and thoroughly dried
  • 12 oz white chocolate chips
  • 1 tsp coconut oil
  • 0.25 cup mini chocolate chips

Equipment

  • 1 baking sheet
  • 1 microwave

Method

  1. Line a baking sheet with parchment paper.
  2. Make sure the strawberries are completely dry.
  3. Combine the white chocolate chips and coconut oil in a microwave-safe, tall measuring cup; microwave at 50% power in 30-second intervals, stirring each time, until smooth.
  4. Holding each strawberry by its stem, dip it in the melted chocolate, let the excess drip back into the cup, then set it on the parchment and gently drag the tip to make a ghostly tail.
  5. While the coating is still wet, press two mini chocolate chips point-side down into each strawberry for eyes.
  6. Refrigerate the strawberries for 15 to 20 minutes, until the coating is firm.

Notes

For the best coating, make sure the strawberries are completely dry before dipping. Refrigerate in an airtight container for up to 2 days; freezing is not recommended because the strawberries can become mushy. For a dairy-free option, use dairy-free white chocolate chips.
