Method
Make the cheesecake filling
- Beat the cream cheese and powdered sugar in a medium bowl until smooth.
- Scoop 16 portions, about 1 1/2 teaspoons each, onto a parchment-lined plate.
- Freeze the filling portions until firm, 30 to 40 minutes.
Prepare the pumpkin puree
- Cook the pumpkin puree in a small skillet over medium heat, stirring often, until thick and reduced to about 1/4 cup, 5 to 8 minutes.
- Transfer the pumpkin to a shallow bowl and cool completely.
Make the cookie dough
- Whisk the flour, baking soda, pumpkin pie spice, and salt in a medium bowl.
- Beat the butter, packed light brown sugar, and granulated sugar in a large bowl until creamy and slightly fluffy, about 2 minutes.
- Beat in the egg yolk and vanilla.
- Mix in the cooled pumpkin.
- Add the flour mixture and mix just until no dry streaks remain.
- Cover and chill the dough for 30 minutes.
Fill and bake
- Heat the oven to 350°F.
- Line two baking sheets with parchment paper.
- Divide the dough into 16 equal portions, about 3 tablespoons each.
- Split each portion in half and flatten the pieces.
- Enclose one frozen filling portion between the flattened pieces and seal the edges.
- Arrange the cookies at least 2 inches apart on the baking sheets.
- Bake for 12 to 14 minutes, swapping and rotating the sheets halfway through, until the edges are set and the tops no longer look wet; the centers will still be soft.
- Cool the cookies on the baking sheets for 10 minutes.
- Transfer the cookies to a wire rack to cool.
Notes
For the softest centers, cook the pumpkin puree until it is thick and reduced to about 1/4 cup, then cool it completely before mixing it into the dough. Store the cookies in an airtight container in the refrigerator for up to 4 days; freezer storage is also suitable. For a dairy-free variation, use dairy-free cream cheese and butter.
