Bacon-Wrapped Green Bean Bundles

Bacon-wrapped green bean bundles are oven-baked with a buttery brown sugar glaze until the bacon is crisp and the beans are tender. Blanching the beans first helps them bake evenly inside each bundle.

Ingredients

For the bundles
  • 1.5 lb green beans fresh, trimmed
  • 12 bacon slices, regular-cut
For the glaze
  • 4 tbsp unsalted butter
  • 0.25 cup brown sugar packed, light
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

Prepare the beans
  1. Preheat the oven to 400°F.
  2. Line an 18x13-inch rimmed baking sheet with parchment paper.
  3. Bring a large pot of water to a boil.
  4. Add the green beans and cook for 3 minutes.
  5. Drain the green beans.
  6. Rinse them under cold water until cool.
  7. Pat the green beans thoroughly dry.
Assemble the bundles
  1. Divide the beans into 12 bundles.
  2. Wrap each bundle with one slice of bacon.
  3. Place the bundles seam-side down on the baking sheet.
Make the glaze
  1. Melt the butter.
  2. Stir in the brown sugar, garlic powder, and black pepper.
  3. Brush the glaze over the bundles.
Bake the bundles
  1. Bake for 35 to 40 minutes, until the bacon is browned and crisp and the beans are tender.

Notes

Pat the beans thoroughly dry so the glaze clings well and the bacon can crisp. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the beans can turn soft. For a lighter option, use turkey bacon, though the texture and flavor will differ.
