Bakery-Style Pumpkin Chocolate Chip Muffins

Pumpkin chocolate chip muffins bake with a high-heat start for domed tops and a tender crumb studded with semisweet chocolate chips. The batter comes together by whisking the wet and dry ingredients separately, then folding them together.

Ingredients

  • 2 cup all-purpose flour spooned and leveled
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.25 tsp ground nutmeg
  • 0.5 tsp salt
  • 1 cup granulated sugar
  • 2 eggs large
  • 0.5 cup neutral oil such as vegetable or canola
  • 1 cup pumpkin puree canned, not pumpkin pie filling
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips

Equipment

  • 1 12-cup standard muffin pan

Method

  1. Preheat the oven to 425°F and line a 12-cup standard muffin pan with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In a large bowl, whisk together the sugar, eggs, oil, pumpkin puree, and vanilla until smooth.
  4. Add the flour mixture to the pumpkin mixture and fold just until no dry streaks remain, then fold in the chocolate chips.
  5. Divide the batter evenly among the liners, filling them nearly to the top; bake at 425°F for 5 minutes, then reduce the oven to 350°F without opening the door and bake for 14–18 minutes, until domed and a toothpick inserted into a muffin center comes out with a few moist crumbs.
  6. Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack to cool.

Notes

For tall, domed muffins, fill the liners nearly to the top and do not open the oven door when lowering the temperature. Store covered at room temperature for up to 2 days or refrigerate for up to 5 days; freeze for up to 3 months. For a dairy-free option, use dairy-free semisweet chocolate chips.
