Ingredients

  • 1.5 lb carrots peeled and cut into 1/4-inch-thick diagonal slices
  • 0.5 cup water
  • 0.5 tsp kosher salt
  • 2 tbsp unsalted butter
  • 2 tbsp honey

Equipment

  • 1 12-inch skillet with a lid

Method

  1. Arrange the carrots in a 12-inch skillet with a lid.
  2. Add the water and salt.
  3. Bring to a simmer over medium-high heat, cover, reduce the heat to medium-low, and cook for 8–12 minutes, until the carrots are just tender when pierced with a fork.
  4. Uncover, add the butter and honey, and cook over medium heat for 2–4 minutes, stirring often, until the liquid is syrupy and coats the carrots.

Notes

For the best texture, cook just until the carrots are tender and avoid reducing the glaze too far. Refrigerate leftovers for up to 4 days; freezing is not recommended. For a dairy-free variation, use dairy-free butter.
