Ingredients

  • 4 tbsp unsalted butter
  • 0.25 cup all-purpose flour
  • 4 cup low-sodium turkey broth
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 3-quart saucepan

Method

  1. Melt the butter in a 3-quart saucepan over medium heat.
  2. Whisk in the flour and cook for 2 to 3 minutes, whisking constantly, until the roux is smooth and pale golden.
  3. Gradually whisk in the turkey broth until smooth.
  4. Bring the gravy to a simmer over medium heat.
  5. Simmer for 5 to 8 minutes, whisking occasionally, until thick enough to coat the back of a spoon.
  6. Stir in the salt and pepper.

Notes

For the smoothest gravy, whisk in the broth gradually to prevent lumps. Refrigerate leftovers for up to 4 days or freeze for up to 3 months. For a dairy-free version, substitute plant-based butter.
